FRESH SALAD RECIPES
1. Broccoli Cauliflower Salad-A Family Favorite
Ingredients:
- 2 cups cauliflower
- 1 lb broccoli florets
- 1/4 cup chopped red onion
- 3/4 cup of raisins
- 1/2 cup of fried bacon pieces
- 1 cup mayonnaise (my favorite, Duke’s)
- 2 tablespoons vinegar
- 3 tablespoons sugar
- 1 cup of dry roasted peanuts
- Sprinkle of cheddar cheese (optional)
Instructions:
Wash and chop all your vegetables. Place them in a large mixing bowl. Add bacon pieces and peanut. In a separate bowl, make your dressing. Combine and whisk together mayonnaise, vinegar and sugar, to create a tasty dressing. Fold dressing into your large mixing bowl of dry ingredients. Mix together well. Salt and pepper to taste. Modify dressing amount according to you taste preference. You might want to make a double batch of dressing for your salad. Refrigerate salad for a minimum of 30 minutes before serving. Enjoy!
